Visiting my family over the holiday Senor Lanky and I stopped in at Olympia Candy Kitchen, a diner that has served fountain drink and hamburgers across the street from the county courthouse since 1912. I had an Olympia special – the olive nut sandwich on toast. Green olives, cashews and mayonnaise with lettuce. It may sound strange, but it has a rich, fatty, delicious flavor. I had mine with a giant side of pickles. While I skipped the green river soda, I did treat myself to a Diet vanilla coke with real syrup and some of Olympia’s delicious, handmade chocolate from behind the original candy counter. The chocolate turtles are my favorite.

    1. Barb, I don’t have the recipe, but I could estimate!

      a big handful of chopped cashews
      a big handful of green olives, chopped
      mix with enough mayo to make a paste
      spread on whole wheat toast.
      serve with lettuce and a side of pickles!
