I had a craving for peanut sauce last night, so I whipped up an almost-quick dinner of homemade setian (frozen and thawed), fresh broccoli, carrots and greens. I stir-fried the seitan first in just a bit of peanut oil until it browned, then added the veggies, a touch of homemade vegetable broth, and steamed everything for about 5 minutes. Meanwhile, I made the “lighter” version of peanut sauce from Bittman’s How to Cook Everything Vegetarian, but with a little extra ginger, chili, and tumeric. I also substitued almond butter for the peanut butter (for it’s healthy fats, but also because it was what I had in the cupboard) and made the sauce just a touch runny (extra vegetable broth) so that I could pour it with abandon over the seitan and veggies. A little fresh cilantro – Delicious.
